Paleo Apple crumble, makes me thumble.

I’ve always had the sweetest tooth and when I decided to take up the paleo way I thought I was going to loose all the good stuff. But I quickly realised that there are better desserts, ones that I enjoy more and I don’t get those sugar highs and lows from.

My sister and I experiment with a bunch of different things or we find recipes online that we adapt to paleo friendly ingredients. This is our Apple crumble.

Serves 3
Prep: 15mins
Cooking: 20mins

INGREDIENTS
Base:
6 small apples
1 tbsp coconut oil
¼ cup maple syrup
1 tsp cinnamon
1 tsp vanilla bean paste

Topping:
½ cup almond flour
¼ slivered almonds
2 tbsp maple syrup
1 tbsp coconut oil

METHOD
• Peel and dice apples and add all base ingredients in a pan on medium heat.
• Whilst apples are cooking combine all the topping ingredients in a bowl and mix till combined
• Spread topping mixture onto a lined baking tray
• Bake in preheated 150 degree oven. Mix every 5 mins to create crumbled texture.
• Bake till golden brown.
• Stir apples and cook till liquid is absorbed and apples turn translucent.
• Once apples are cooked place in bowls and top with crumble mixture.

You can serve it with coconut ice cream or whatever you choose to enjoy it with.
